We are officially in the homestretch of this 30-day vegan journey with just seven days remaining. Amazing. Honestly, with the exception of wanting to lick the sauce right off someone’s hand whenever I see pizza, this journey has been a cinch. For sure, I thought I’d fall off the wagon the first week. Pizza and pasta are my nemeses. But I’ve hung in there and so have you. In just a few short days we’ll be certified, vegan that is. Well, I did what I do best and surfed the web and found another delicious vegan recipe. Check it out.
Faux Chicken Tacos via vegweb.com
7 ounces vegan chicken, cubed (I use Gardein Chick’n Fillets)
2 teaspoons olive oil
1/2 teaspoon smoked paprika
1/2 teaspoon cumin sea salt and pepper, to taste
1/4 cup cilantro, chopped
4 corn tortillas, warmed (I use Food For Life Sprouted Corn Tortillas) lettuce, shredded, to serve salsa, to serve
Directions: 1. Heat olive oil in pan over medium-high heat. Add vegan chicken, cumin, paprika, salt and pepper. 2. Saute for 4 to 5 minutes. Remove from heat and toss with fresh cilantro. 3. Add to warmed tortilla shells, and top with lettuce, and salsa. Enjoy!
Don’t be afraid to get out on google and step outside of your comfort zone where recipes are concerned. You’re not required to eat the same fruits and vegetables everyday. Change it up.
