Day#19 of the 30-Day Vegan Journey

Good evening all. Thank God it’s Friday and you’re vegan! Can you all believe we only have eleven days left in this journey? And you thought you couldn’t do it. We’re in the home stretch now. Set the cruise control to destination healthy. Just think, when you reach the mark, you’ll look back at day one and celebrate just how far you’ve journeyed.

Tomorrow’s cardio challenge goes down like this:

  • 4 miles on the pavement: speed walk or run
  • Stretch

Here’s what’s on the menu:

Breakfast:

Huevos Rancheros / Veggie Sausage / Pumpernickel bagel with blackberry jam

Lunch;

Quick Black Bean Chilli / Baby carrots and sliced cucumbers

Dinner:

Enfrijoladas / Mixed Greens with corn and squash / Quinoa Verde
