Day#17 of the 30-Day Vegan Journey

Howdy vegan folks! We’re over the hump of this 30-day vegan journey and on to another vegan Thursday. You don’t have to tell me how you feel after today’s workout. I’m sure I’ll hear about it in my inbox tomorrow. Ha! Don’t quit! Your body is appreciating every moment of this journey and will demonstrate it beautifully when you try on those pair of jeans you’ve hidden in the never again section of your closet. To be frank, besides eating a balanced and healthy diet, there’s no other way to keep your body in tip-top shape except to exercise it frequently.

Exercising your body regularly not only regulates the size of your physical frame, it protects your organs, which in turn extends yours days or grants you longevity of life. There are also psychological benefits to exercise. From personal experience, it reduces stress and anxiety, not to mention migraine headaches from a rough workday.

Here’s tomorrow’s cardio challenge:  45 Minutes or run/walk intervals

  • 9 minutes walking
  • 1 minute jog/run
  • 10 minutes walking
  • 2 minutes jog/run
  • 11 minutes walking
  • 3 minutes jog/run
  • 9 minutes walking
  • Stretch

  • 1 block of extra-firm tofu, baked (FatFree Vegan)
  • 1 lb of potatoes, steamed
  • 1 lb of broccoli, thawed if frozen
  • 8 oz carrots, sliced
  • 1 cup peas, fresh or frozen
  • 1 onion, sliced
  • 3 cloves of garlic
  • 1 tbsp ginger, fresh or paste
  • 1 tbsp low-sodium soy sauce
  • water
