Good morning all. I hope you’re up and at it already. Today is the first day of our 30-day vegan journey. As I promised, I wanted to share with you my recipes for today to get you started or give you some idea on how to eat vegan. I hope you all got a chance to get over to the grocery store and bulk up on fruits and vegetables. Having the foods that you need on hand will make this journey easier.

Because I like structure, I went ahead and downloaded the e-version of Neal D. Barnard’s 21-Day Weight Loss Kickstart. It’s a vegan guide to instruct you a little on why veganism is better for the body. And, it’s also includes recipes for breakfast, lunch, and dinner for the first 21 days. I’m going to try to post them every morning for you if I can. But, if you can, go ahead and make the investment. It’s only $8.99 if you go through google play. Here are my recipes for today:

Breakfast

  • Mango Lime Pancakes with maple syrup
  • Fresh Strawberries

Lunch

  • Blue Corn Chip Salad
  • Sliced watermelon drizzled with lime juice

Dinner

  • Fettuccine with Grilled Asparagus, Peas, and Lemon
  • Cardo Verde
  • Pears in Balsamic Glaze
